Plurals in -s / loss of final s

Subject: Plurals in -s / loss of final s

Western Romance plurals derive from the accusative ending < -s>. This weknow. But I keep also reading about the "loss of final s" in VL, withexamples such as the singular <-us> ending becoming < -o>. This seemscontradictory. What am I missing / not understanding here?
