Good point -- now that I'm reminded of it, I've heard English /u/ as in "lunch" end up as a Spanish /o/ in other contexts.

Strangely it does in Danish too.  You hear a lot of
people exclaim "fokk" when going over there.  In
Swedish and Norwegian it tends towards �/�.
I remember seing "grunge" spelled _gr�nsj_ in a
Norwegian magazine.
