I had thought the Celtic substrates hadn't had an enormous influence on French or Spanish -- some vocabulary, often for everyday/rural things, but .... I have heard that the pronunciation of Latin u as [y] in French may be due to Gaulish influence, but I'm not sure how far any more of that goes. Frankish certainly had a much greater vocabulary impact on French than did Gaulish, perhaps greater influence on pronunciation ....
Actually, the more I think about it, northern French dialects, like Picard or Walloon, might be a passable starting point for ideas about a Western Romance language developing under the influence of Ingvaeonic-type Germanic ....
