The long vowels would generally just remain the corresponding [Classical] Hebrew vowels: /e/ and /o/ Short /e/ in a closed syllable (or stressed open syllable) would probably end up as /E/, and in a non-stressed open syllable shift 'lengthen' to /e/ Short /o/ in some cases would follow the development of the segolized short /u/ in the word /mund(i)/ > /monEd/. In closed syllables it'd probably just end up as /O/, with possible dialect-mixing-based variation with ('short') /u/.
