The vocabulary section of WH Paden's "An Introduction to Old Occitan"
(a commendable book in all respects) gives etymologies for a good
chunk of OO words, not just lexemes but also derivational morphemes as
well.

For Italian etymology, there's the website http://www.etimo.it/
