I don't know how <espaol> came to be, but I was
wondering about the very question the other day (as
one does...).

It seems to be from prov. 'espaignol'.

Itself ultimatly from a Vulgar Latin "hispaniolus" (< "hispanus" + dim. suffix "-olus").

The natural development of the adjective "hispanicus" might have become something like *espaego (?) in Castilian Spanish (though I suppose it might have been learnedly reanalyzed as *espanico, too), and the Latin "Hispani" would have become *espanos.
