If you can track them down, I think Hall's _Proto-Romance Phonology_ and _Proto-Romance Morphology_ (individual volumes of his _Comparative Romance Grammar_ work) are still quite useful, too.

Additionally, some general historical grammars or overviews of given Romance languages give some useful information on the particular evolutions of those languages, including their "Vulgar Latin" stages. For example, I get a lot of use out of Ralph Penny's _A History of the Spanish Language_. I've another book (relatively popular and not blindingly technical, insofar as "relatively popular" can be applied to a historical philology!) about Italian, though I can't remember the author/title offhand.
