Not much, so far! Besides the Viteliu site that Jan mentioned, I'm also aware of these web pages that touch on the suibject:

In addition to the books mentioned by Padraic, I'm also given to understand that there's an introductory sort of chapter on the changes between PIE and Latin in Anna Giacalone Ramat and Paolo Ramat, _The Indo-European Languages_ (London: Routledge, 1998).
