For Spanish, you can try the Phono software, which comes with a file describing the changes fairly accurately. Unfortunately, the file is intended for the program to use, and as such is not exactly comprehensible to humans unless they know the 'language' the program itself uses (luckily the file is in plaintext and the language is fairly straightforward if you have some experience using the program). Other than that, I don't know of one. Here's a question that has come up before, but I'm wondering if the answer is different now: Is there anywhere on the Net a good listing of Latin words in a form suitable for generating Romance words?
